Delicious Balsamic Roasted Vegetables…

…earlier in the week it was so baking hot which was lovely though I didn’t fancy having the kitchen oven on full whack…I went to our local organic shop and picked up some easy summer vegetables and thought we’d have baked veggies and pittas…light dinners are always favoured in the heat in this house…oh and ice lollies too…The healthy part of our dinner was a mix of vibrant veggies scattered in a big ceramic dish and baked until golden…I love nothing more than a tray bake and this Mediterranean bake is my favourite for balmy Summer evenings…

Roughly chop and slice courgettes

red onions

Yellow peppers

Red peppers

Season with a little olive oil, black pepper and a drizzle of balsamic vinegar. Roast in the oven for 45-50 minutes at 180 degrees. The juices from the vegetables and balsamic infuse over the cooking time and they taste delicious.
