Preparation time~ 10 minutes
Cooking time: 20 minutes
1 white onion
2 large potatoes
400ml reduced fat coconut milk
3-4 tablespoons curry paste
Heat a pan and add 1-2 tablespoons of olive oil. Finely chop the onion and cut the potato into small squares. Roughly dice the aubergine.
Add the onion and potatoes to the oil and gently cook until the potatoes are soft. Add the aubergine and the button mushrooms to the pan.
Stir in the curry paste and give the veggies five minutes to infuse. Next add 150ml of quality vegetable stock.
Pour in the coconut milk, bring to the boil and gently stir. Finally, allow the vegetables to completely soften together. Simmer for 10 minutes or so. Serve with rice and a sprinkling of fresh coriander.
